Golden Lentil Soup

Ingredients:

  • 1 tbsp olive oil

  • 1 small onion, chopped

  • 2 cloves garlic, minced

  • 1 tsp ground turmeric

  • 1/2 tsp ground cumin

  • 1/2 tsp ground ginger

  • 1 cup red lentils, rinsed

  • 1 carrot, diced

  • 1 celery stalk, diced

  • 4 cups low-sodium vegetable broth

  • Juice of 1/2 lemon

  • Salt and pepper to taste

  • Fresh cilantro (optional)

Instructions:

  1. Heat olive oil in a pot over medium heat. Add onion and garlic, sauté until soft (about 3–4 minutes).

  2. Stir in turmeric, cumin, and ginger, cooking for 1 more minute.

  3. Add lentils, carrot, celery, and broth. Bring to a boil, then reduce heat and simmer for 20–25 minutes, until lentils are soft.

  4. Stir in lemon juice, season with salt and pepper, and garnish with fresh cilantro if desired.

This comforting soup is rich in plant-based protein, fiber, and anti-inflammatory spices like turmeric and ginger—great for supporting immune health and reducing inflammation, especially for those managing chronic conditions like lupus.
