Golden Lentil Soup
Ingredients:
1 tbsp olive oil
1 small onion, chopped
2 cloves garlic, minced
1 tsp ground turmeric
1/2 tsp ground cumin
1/2 tsp ground ginger
1 cup red lentils, rinsed
1 carrot, diced
1 celery stalk, diced
4 cups low-sodium vegetable broth
Juice of 1/2 lemon
Salt and pepper to taste
Fresh cilantro (optional)
Instructions:
Heat olive oil in a pot over medium heat. Add onion and garlic, sauté until soft (about 3–4 minutes).
Stir in turmeric, cumin, and ginger, cooking for 1 more minute.
Add lentils, carrot, celery, and broth. Bring to a boil, then reduce heat and simmer for 20–25 minutes, until lentils are soft.
Stir in lemon juice, season with salt and pepper, and garnish with fresh cilantro if desired.
